左宗棠鸡的发明人是彭长贵,他将炸过的鸡腿肉再炒成酸甜的口味,食者称赞其味美,并问及菜名,彭长贵随口而答“左宗棠鸡”。此名灵感系因为当时宾主均为将领,而左宗棠为清朝湘军大将,曾参与剿灭太平天国、平定同治新疆回变,又是与彭长贵为湖南同乡人,故以为名。可能外国人对于这种酸酸甜甜的食物没有什么抵抗力吧,现在这几乎是他们去中餐厅的必点菜了。


李鸿章杂碎 Chop Suey

传闻李鸿章在访问美国时,因吃不惯西餐,其私人随身厨师便将剩菜杂烩一锅,恰巧有外国客人造访,李鸿章挽留招待。外国客人品尝后称赞之余,向李鸿章询问菜名,李随口一句“杂碎”。另一传说是李鸿章要宴请美国人,李鸿章的厨师为了满足中美两国的口味,而发明了“杂碎”。此后“李鸿章杂碎”便流行开来,在当地大受欢迎,成为当地中餐馆的一道招牌菜。
