So lovely people we're going to make homemade scones.
亲爱的朋友们,今天我们要做的是自制司康饼。
I love doing this. I probably do it every single week. The kids love it.
我有多爱司康呢,可能一周做一次。孩子们也很爱这个。
It's really really really easy and I'm going to be bigging up my beautiful bakeware range.
而且这个真的真的真的很简单,现在开始装满我漂亮的烤盘吧。
We're going to use 500 grams of self-raising flour, 150 grams of diced unsalted butter.
先来500克自发面粉,150克切碎的无盐黄油。
I will put a pinch of salt in because I don't want them to decide how much salt goes in.
我先捏一撮盐,因为不想让它们来决定咸度。
I want to put my pinch in.
我有我自己的风味。
A couple of teaspoons of sugar in just to kind of give it an edge of sweetness.
放几勺糖,添点甜味。
I don't want it to be sweet just kind of take it off of savory, okay.
不要太甜,有点滋味就好。
Then I'm going to go in with two sort of semi heaps like that teaspoons of baking powder.
然后我们再放两小勺发酵粉。
That's going to give it a nice little rise.
这能让司康变得更蓬松一些。
Then what I want to do is just rub this together.
接着,我要做的是把所有的搅拌在一起。
It doesn't need to be perfect if you've got a few blades of butter sort of in the mix. It's all good.
也不说需要多完美,就算有黄油块也没关系。都挺好。
It gives lift and rise to your beautiful scones, so bring that together.
让你漂亮的司康松软蓬松,再往中间倒点牛奶。
A little splash of milk and then I've got 150 grams of lovely dried fruit.
接着加150克的干果
Random. You know you go apricot, sour cranberries, cherries.
随便放,杏干,蔓越莓,樱桃干
You name it. You can do it.
你的司康你做主。
I just put a little orange juice on top of it and leave it for about half an hour just to sort of slightly rehydrate those lovely fruits.
我会在最上面倒一点橙汁,静置半小时,稍微让这些干果变得更湿润些。
And then literally I'm going to hug this together and try not to overwork it. Okay.
然后再拢一拢,不要太大劲。
So as soon as it comes roughly together like this, I'll cover it.
一旦大致形状像这样了,我就会盖好它。
I'll let it chill out in the fridge and then I'll roll it out in about half an hour.

So we got some beautiful cutters here. All kinds of shapes and sizes.

We got the fluted and the plain. A range of different sizes as well.

I'm going to just do a little mixture of all of them really just to kind of get the fun going, so I'm going to go straight on to a baking sheet.

I'm going to just add all of these as long as there the same thickness.
只要他们厚度相当,放在一起就没什么问题。
They're going to cook at the same time.
它们可以一起烤。
So we got our beautiful sour fruits scones there.
我们的酸果司康就成型了。
You can put a little milk on top or a little butter.
你可以在上面稍微加点牛奶或者是黄油。
I'm just going to use a little extra virgin olive oil, not very classic, but I don't mind it perfect for the job.
我还要刷一点初榨橄榄油,这不是很传统的做法。我觉得没什么,很完美。
Brush them on top.
在上面刷匀油。
They'll cook up an absolute treat.
美味马上就要出炉了。
In the oven 180 degrees Celsius which is 350 degrees Fahrenheit.
放到烤箱里摄氏180度,也就是华氏350度。
Cook those for about 15 minutes until they've doubled in size gone nice and golden, and then I will put them together with simple classic clotted cream and jam.
烤15分钟,直到它们变成双倍大小,色泽金黄。我们要配经典的奶油和果酱一起享用。
So the lovely scones have had a cheeky little 15 minutes in the oven.
这些可爱的司康饼已经在烤箱里享受了美妙短暂的15分钟了。
Let's get them on a cake rack. So, look, these are rough and ready and they are rustic.
把它们放到蛋糕台上。看!它们外形狂野很粗糙。
And I love them this way. Okay, for me, it's all about the flavor and the texture. Right.
但是我就爱这种风格。因为风味和口感都是上乘的。
Crumbly jam, clotted cream, gorgeous.
搭配果酱,凝脂奶油。完美!
If you work that dough harder, you will get a more perfect shape and cut out.
你要是面团揉得硬,司康外形看起来会更完美。
But I don't think they taste as good.
但我觉得吃起来就差强人意了。
Clotted cream has to be one of the most ridiculous delicacies in the world.
凝脂奶油应该是世界上最无敌好吃的美食之一了。
Some lovely jam absolute simplicity at its best.
简单的抹一点果酱风味更佳。
